Make Ahead Meals
It’s that time of year again! Summer is winding down, the school year is starting soon (or has already started), and time suddenly seems to be in short supply. This is the time of year when cooking can become a bit of a chore. Between getting used to new schedules, the calendar suddenly being fully booked, and even the shortening days, having to cook a fresh meal every single day can seem like a daunting task.
This is where make ahead meals come in! I’ve put together a collection of dishes that make a ton of food to get through the busy week, but also freeze really well so you can stock up your freezer for those weeks you don’t have time on the weekend for meal prep. Many of these are also one pot meals, so bonus, less time cleaning up!
First on the list of make aheads is an old favorite, Beef Bourguignon!
This is a fantastic one pot meal, it’s easy to make, and makes a ton of food! I love to serve this with a side salad and some fresh sourdough bread for an easy delicious meal!
Next up is Artichoke Chicken.
This is my most popular recipe, and rightfully so! The flavors are amazing, it is SO easy, it is almost a one pot meal (but you can clean the first pan while the dish cooks to be efficient!), and it is definitely a crowd pleaser. This is my #1 go to for potlucks, and everyone raves about it and requests the recipe. You really can’t go wrong with this one!
Our next make ahead meal is a Beer Braised Pot Roast.
Of all the recipes, this makes probably the most amount of food. You can freeze a bunch of this and have meals for weeks! Not only is this one delicious, it’s also a fun one since you can throw in whatever vegetable you want to make it your own. Oh, and once again, this is a one pot meal!
The next great make ahead meal is Butter Chicken.
Yet another one pot meal, this one is packed with flavor and is super easy to make. Serve this with some naan and a side salad and you’ve got a great easy meal. This one also freezes really well!
Last, but certainly not least, is Sourdough Pizza!
This recipe is great because it makes enough dough for three 10”-12” pizzas, and the dough freezes really well. So you can make the dough and freeze it for one of those nights you’re just craving pizza. You can also stock up on pizza cheese (which also freezes well), and sauce, which again you can freeze! You basically can have a full pizza kit ready to go in your freezer.
