Week in Review (3/13/22)

Happy Saturday everyone! Once again I am back to go over the past week of cooking adventures.

This week kept me pretty busy in the kitchen, and involved a LOT of margaritas. The end results though were awesome and I can’t wait to share!

Before getting to the winner and loser of the week, let’s go over the recipes that were made.

First up is the avocado margarita. This was a a fun one to test, although it took a lot more tests than I expected! I was inspired by the margaritas I’ve had at La Cava del Tequila in Epcot, and tried many different combinations to get a margarita that tasted like that one! In the end I found the perfect mix that is delicious!

 
 

Next up was the Lemon Poppy seed Brussel Sprouts. This is one of my favorite side dishes to make, it’s super simple and very quick to make. This one always comes out great!

 
 

Our next recipe for the week was the Stuffed Peppers. This is another one of my favorite dishes to make. It is a one pot meal (which you know I love) and makes enough for a few days of meals, so it’s great to make ahead for those long weeks when there just isn’t much time for cooking.

 
 

Last, but not least, is the Corned Beef! This year I decided instead of buying one that is already brined and ready to cook, that I would go through the brining process myself. It’s actually incredibly easy, the hardest part was trying to find a place in the fridge to put it along with all the other leftovers. Seriously, I need a second fridge! Anyways, this is still sitting in the brine, so no comments yet, but there will be comments soon!

Alright, now onto the winner and loser of the week! First up is the winner, and it is the avocado margarita!

This turned out great! The flavors are fantastic. There is a very mild flavor of the tequila, and the avocado flavor isn’t overpowering. It’s very mellow, and will become a go-to drink this summer!

Now for the loser. While none of the recipes this week were bad, there is one that I haven’t been able to try yet since it’s still being made, so that will be the loser of the week! Yup, you guessed it, the corned beef! So not really a loser, I just can’t say it’s a winner yet since I haven’t tried it!
