Week in Review (3/20/22)
This ended up being a super busy week so I didn’t get as much cooking done as I would have liked. Oh well, not every week can be a winner! I did however get through the items on the menu so not all was lost!
The week started with finally cooking the corned beef that had been brining for about a week. This Corned Beef and Cabbage recipe has been used by my family for generations, and is always a big hit. The key is to cook the beef for a very long time on low heat so it ends up nice and tender. I like to serve this with a little bit of mustard on the side.
Oh, and the homemade corned beef turned out fantastic! I would say tasted better than the store bought, and I loved that I can control the ingredients. This is especially helpful when you’re not feeding a lot of people and don’t want to make a lot, you can have your butcher cut a smaller piece of meat for you so you don’t end up with a ton of leftovers!
Ok, next up was the Sourdough Pizza! I had not actually intended to make it before the drumsticks, but the drumsticks took longer to thaw than expected, so I had to change things up on the fly. Fortunately I had the pizza dough already made, so it ended up being a quick and easy weeknight meal.
I definitely recommend making some dough (recipe makes enough for three pizzas) and freezing it for meals later. It freezes well and takes about a day to thaw in the fridge.
The last recipe of the week was the Garlic Parmesan Chicken Drumsticks. Now these were good, very garlicy, but I’m not a huge fan of drumsticks so this was probably a one and done for me. I will be posting the recipe shortly though, because it was actually very flavorful and I’m sure there are plenty of people who do love drumsticks!
Now for the winner and loser of the week. For the winner it was a tough call, but in the end I had to go with the pizza. While all the food was good, the ease of the pizza, and the fact I could make it earlier than planned without any issues gave it the advantage. For the loser of the week, I’m going with the drumsticks. While they did taste good, I’m not a huge fan of drumsticks. If I’m having chicken I will 99.9% of the time go for chicken breasts. Now these weren’t bad by any means, so I will be posting the recipe since I’m sure others would enjoy them more, but for me they weren’t my favorite.
