Week in Review (3/27/22)

Happy Saturday everybody! What a fun week in the kitchen, made two of my favorite dishes and brought back a drink I love but haven’t made in a while.

The menu this week worked out perfectly with the amount of leftovers. I only had to cook twice for a whole weeks worth of food!

The first dish of the week was the Chicken Marengo.

 

Chicken Maregno

 

Since it was finally starting to get warm around here I was in the mood for something that was light and bright, and this Chicken Maregno fit the bill perfectly! It is loaded with fresh veggies and makes just a really nice meal for a spring or summer day. It also is a one pot meal, which are my favorite types of meals, and it makes enough for 4-5 servings so there were plenty of leftovers to enjoy throughout the week!

The next dish of the week was the Chicken Milanese with a Creamy Tomato Fennel Sauce. Ok, that’s a mouthful, but my goodness is this one delicious!

While the best thing about this dish I think is the sauce, I do have to give myself props since I did probably my best job ever with the chicken. Now I’m horrible at breading chicken, I generally avoid recipes that involve it since it frustrates me so much and it never comes out right. Well, this week I had the idea of putting the panko bread crumbs in a food processor to grind them into a powder, and this ended up working perfectly!

I have never gotten such an even golden coating that actually stays on while cooking, I couldn’t believe how well this worked out!

Then of course there is the sauce. I would make this sauce to put on pretty much anything. Even though it’s creamy, it’s actually really light. Love the mild crunch from the fennel and the burst of sweetness from the tomatoes. Just all around a great addition to the dish!

Alright, the last recipe for the week was a White Wine Sangria with Mangos and Oranges!

 
 

It was probably about ten years ago now that a friend asked me for a white wine sangria recipe, and I ended up sending this one. It instantly became a huge hit, and for the next few summers it was our go to drink at get togethers.

It’s been a while since I’ve made this, but since it was starting to get nice outside again I figured this would be a perfect drink to usher in the warmer weather.

This once again came out great! It is so refreshing, and I love the chunks of mango in it. Definitely recommend for BBQs this summer!

Now for the winners and losers this week. Well, there was no loser, I was really happy with each thing I made. It’s hard to have a loser when making things you know you love! Don’t worry, next week will have some completely new recipes so it’ll be more of an experiment.

For the winner, I’m going to have to go with the Chicken Milanese, simply because I finally did a fantastic job breading the chicken! Everything this week though was delicious, would recommend each and every item!
