Week in Review (4/10/22)
Welcome to yet another week in review! This week turned out a bit different than planned, and sadly I did not get a chance to make all the recipes I had wanted to make. The good news is I made the brand new recipes, so only the old tried and true got skipped, and I’m happy to say, the new recipes were amazing!
First up was the Bacon Wrapped Brussel Sprouts.
These were so good! I can’t believe it took me so long to think about wrapping brussel sprouts with bacon! I’ve done bacon wrapped sweet potatoes, and bacon wrapped dates before, but never brussel sprouts. This is definitely a keeper though, I will be making these again!
The next dish was the Honey Citrus Chicken.
You may have noticed the name of it changed from the weekly menu. While it was still the same recipe, I didn’t taste lemon at all, and in fact thought it tasted more orangey (even though there is no orange in it), so changed the name to more accurately reflect the dish.
This one is a new favorite. It is so light and bright, perfect for spring! The sauce is delicious, I could just eat a bowl of the sauce with nothing else!
Now for the winners and losers of the week. Well, for the winner I’m going with the Honey Citrus Chicken. It was amazingly fast to make, and the flavors were great! I can’t wait to make this one again!
For the loser, well that’s easy, it’ll be the dish I never bothered making, the chickpea salad! Don’t worry though, that one will be made soon, it is actually a very tasty side dish, I just ran out of time this week to make this one!
This coming week will be another light cooking week since my family is here, but we will be making a few things, so check out the menu for the week!
