Week in Review (4/24/22)
Happy Saturday everyone! Welcome to this weeks week in review.
It was a great week of cooking, and very fish focused! Actually all three dishes this week were fish! They were however very different from each other.
The first dish of the week was the pan seared scallops with a mushroom and tomato topping.
This was phenomenal! The scallops were seared to perfection, and the mushroom and tomato topping was so flavorful. The great thing about this topping is that is can be used for really any meat, so if scallops aren’t your thing you can try it on shrimp, chicken, or even pork!
The second dish of the week was the swordfish kabobs!
These were so good, and so nice and light with all the fresh veggies. Now since we had some super gusty winds here the day I made them I ended up baking them instead of grilling them, but these can definitely be grilled as well (just use a grill pan so the fish doesn’t get lost in the fire). A great option for dinner, especially if you have a bunch of veggies you need to use up!
The third and final dish this week was the green curry with halibut.
I don’t even have the words to describe how amazing this dish was. I could not stop eating it, it was so ridiculously good! It was pretty spicy, but this is not one of those dishes where you just get heat and no flavor. Nope, even with the heat, the flavors really were able to shine through, and it was just overall an amazing dish. Will 100% be making this one again soon!
Now for the winner this week, honestly I think it’s a tie. Both the scallops and the halibut were so amazing, I can't pick just one! Now, I don’t think I can say the swordfish kabob was the loser simply since it wasn’t the best of the week, it was still really good, just didn’t have as much flavor complexity as the other two, which some days is what is desired!
