Harissa Chicken
This is a very easy dish to make, but don't let the simplicity fool you, the flavors are amazing! Added bonus, this is a one pot meal!
Ingredients:
1 lb chicken cutlets
2 tsp extra-virgin olive oil
3 Tbsp Harissa Sauce (this comes in various heats, I used the mild version for this one)
3 cloves garlic, minced
1/2 cup dry white wine
1/2 cup heavy cream
4 cups kale, thinly sliced
Salt and pepper to taste
Instructions:
Pat chicken dry and sprinkle with salt and pepper.
In a large skillet heat olive oil on medium-high until hot and add chicken. Cook chicken 3 minutes per side, or until cooked through, then remove to plate and cover to keep warm.
To the skillet, add the harissa sauce and garlic and cook, stirring constantly, for 1 minute.
Add the wine to the skillet and cook, stirring occasionally, scraping up the fond for 2 minutes or until mostly reduced.
Lower the heat to medium-low and add the cream and the kale. Cook until kale just starts to wilt, about 3 minutes.
Return the chicken, and any accumulated juices, to the pan and cook for another 2-3 minutes until kale has wilted. Stir occasionally and scoop the sauce over the chicken to fully coat.
