Jalapeno Stuffed Grilled Cheese

 Ingredients:

  • 2 Slices Bread (I like Sara Lee Artesano)

  • 2 Slices of cheese, cheddar or american

  • 1 Jalapeno Pepper

  • 1 Tbsp Butter

  • Extra Virgin Olive Oil

 

 Instructions:

  1. Preheat oven to 425 degrees

  2. Cut off stem of pepper and discard. Cut pepper in half lengthwise, and cut out the ribs and remove the seeds.

  3. Place pepper on a baking sheet, drizzle with olive oil, and bake for 30 minutes. Allow to cool before handling.

  4. Once pepper is cool, slice into 1/4” pieces.

  5. Place one slice of cheese on a slice of bread, place the cut jalapenos on top of the cheese, top with the second slice of cheese and put the second slice of bread on top.

  6. Heat butter in skillet over medium until melted.

  7. Add sandwich to skillet and cover, cook 3 minutes.

  8. Flip, cover, and cook additional 3 minutes.

  9. Let cool before eating.
