Chickpea Salad
This is a super easy side dish, all you need to do is chop up the ingredients and combine them! This can also be a meal, great for days you don’t want to turn on the oven.
Ingredients:
1 15oz can Chickpeas
3/4 cup fresh Basil leaves, roughly chopped
3/4 cup fresh Parsley, roughly chopped
1 clove Garlic, minced
Juice from one lemon
1/2 cup freshly grated Parmigiano-Reggiano
1 Tbsp Olive Oil
Salt and Pepper to taste
Instructions:
Combine all the ingredients in a bowl, toss to mix.
