Asparagus Soup
Ingredients:
1 bunch Asparagus, cut into 1 inch pieces
1 large Leek, white and light green portion only, thinly sliced and thoroughly cleaned
1 small Onion, thinly sliced
4 cups Vegetable Broth
4 Tbsp Butter
4 oz Creme Fraiche
Salt and Pepper to taste
Instructions:
Melt butter in a pot.
Add Onion and Leeks, season with salt and pepper, and cook stirring occasionally for 5 minutes.
Add Asparagus and Broth and bring to a boil. Once boiling, cover and reduce heat. Simmer for 15 minutes or until Asparagus is tender.
Remove from heat and let cool for a few minutes.
Using either an immersion blender, or working in small batches a regular blender, blend until smooth.
Add in Creme Fraiche and stir to combine.
