Beef Bourguignon
One of the most amazing one pot meals, this beef bourguignon is so flavorful and so easy! It's the perfect meal for a cold winter day, and it makes a good amount of food so great for families or meal prep!

- Heat oven to 350 degrees.
- Pat beef dry and season with salt and pepper
- Heat a dutch oven or heavy bottom lidded pan over medium-low heat and add bacon. Cook 12-15 minutes until browned and crisp. Removed from pan using a slotted spoon.
- Raise heat to medium-high and add beef, working in batches. Cook for 2-3 minutes per side until browned. Remove from pan.
- Reduce heat to medium and add onion, carrot and a pinch of salt. Cook, stirring occasionally for 10 minutes.
- Stir in garlic and tomato paste and cook, stirring constantly, for 1 minute.
- Add flour and cook, stirring constantly, for 1 minute.
- Add wine, and bay leaf, and stir to combine, scrapping up fond.
- Add beef and half of the cooked bacon, the mushrooms, and the thyme. Cover and put into oven for 1.5 hours.
- With about 30 minutes left to cook add the pearl onions.
