Beef Bourguignon

One of the most amazing one pot meals, this beef bourguignon is so flavorful and so easy! It's the perfect meal for a cold winter day, and it makes a good amount of food so great for families or meal prep!

  1. Heat oven to 350 degrees.
  2. Pat beef dry and season with salt and pepper
  3. Heat a dutch oven or heavy bottom lidded pan over medium-low heat and add bacon. Cook 12-15 minutes until browned and crisp. Removed from pan using a slotted spoon.
  4. Raise heat to medium-high and add beef, working in batches. Cook for 2-3 minutes per side until browned. Remove from pan.
  5. Reduce heat to medium and add onion, carrot and a pinch of salt. Cook, stirring occasionally for 10 minutes.
  6. Stir in garlic and tomato paste and cook, stirring constantly, for 1 minute.
  7. Add flour and cook, stirring constantly, for 1 minute.
  8. Add wine, and bay leaf, and stir to combine, scrapping up fond.
  9. Add beef and half of the cooked bacon, the mushrooms, and the thyme. Cover and put into oven for 1.5 hours.
  10. With about 30 minutes left to cook add the pearl onions.
