Mahi Mahi with Mango Jalapeno Salsa
This is a wonderful light dish! It's so easy to make, tastes great, and it's healthy! I like to make additional salsa just enjoy on other dishes or on its own, it is just so delicious!

- Preheat oven to 400 degrees.
- Season Mahi Mahi fillets with salt and pepper and bake for 20 minutes until cooked through and flakey.
- While fish cooks, combine Mango, Jalapenos, Red Onion, Lime Juice, a drizzle of Olive Oil.
- Serve fish topped with salsa.
