Salmon Burger

If you're looking for an alternative to a beef burger, this is a great option! This salmon burger is super flavorful with the roasted red pepper aioli and homemade pickle!

  1. Combine Vinegar, Water, 1 Tbsp Dill, crushed Garlic, and salt in a small saucepan. Heat over medium-high until salt dissolves 1-2 minutes. Remove from heat and add cucumbers. Set aside.
  2. Combine red peppers, mayonnaise, and grated garlic in a bowl.
  3. Combine chopped salmon, 1/4 cup of the mayonnaise blend, chives, and remaining dill into a large bowl. Form into 4 equal size patties.
  4. In a large skillet heat olive oil over medium high heat until hot.
  5. Once skillet is hot add the patties and cook 4-5 minutes per side until cooked through.
  6. Remove patties from heat and assemble the burgers with arugula, patty, mayonnaise mixture and the drained pickles.
