- Heat a drizzle of olive oil over in a pot over medium heat and add onion. Cook, stirring occasionally for about 8 minutes until onion just starts to soften.
- Add garlic and cook for 1 minute, stirring constantly.
- Add ground beef, breaking up as you stir. Cook until just browned, about 4 minutes.
- Add Chili powder, Cayenne Pepper, Red Pepper Flakes, and Cumin and cook, stirring constantly for 1 minute.
- Add Green Pepper, Bay Leaf, Tomatoes, and salt and pepper to taste, increase heat and bring to a boil.
- Once boiling, cover and lower heat and simmer for 2.5 hours.
- Add coffee and cover and let simmer for additional 1 hour.
- Add Kidney Beans and Basil and cook for about 10 minutes until heated through.
- Let rest for about 15-20 minutes.
- Serve with a spoonful of sour cream and grated cheddar cheese on top.
