Lobster Pasta Salad

 This is a great, easy, recipe for the summer. Perfect as a side or even a main dish!

 Ingredients:

  • Olive Oil

  • 1/2 lb pasta, such as shells, penne, or farfalle

  • 4 ears of corn

  • 1 bell pepper, yellow, orange, or red, medium diced

  • 4 scallions, thinly sliced

  • 1 pint cherry tomato, halved

  • 1 lb cooked lobster meat, medium diced

  • 3/4 cup mayonnaise

  • 1/2 cup sour cream

  • 1/4 cup freshly squeezed lemon juice

  • 1/2 cup minced fresh dill

 Instructions:

  1. Cut off kernels from the corn.

  2. Bring a large pot of salted water to a boil, add the pasta and a drizzle of olive oil and cook per instructions on box, adding the corn kernels with two minutes left to cook.

  3. Drain the pasta and dump it and the corn into a large bowl.

  4. Add the scallions, diced pepper, tomatoes, dill, and lobster and stir to combine.

  5. In a separate bowl, whisk together the mayonnaise, sour cream, lemon juice, and salt and pepper to taste. Pour over pasta and stir to combine.

  6. Cover and place in refrigerator for 4-6 hours.

  7. Serve chilled.
